Chicken Parmigiana
The Recipe

you will need:
1 egg, beaten
2 ounces dry bread crumbs (I used Italian bread crumbs)
2 skinless, boneless chicken breast halves
3/4 (16 ounce) jar spaghetti sauce
2 ounces mozzarella cheese
1/4 cup grated Parmesan cheese

preparation:
preheat oven to 350 degrees F
lightly grease a medium baking sheet
pour egg into a small shallow bowl
place bread crumbs in a separate bowl
dip chicken into egg, then into bread crumbs
place coated chicken on prepared baking sheet

cook:
bake in preheated oven for 40 minutes, or until no longer pink and juices run clear
pour 1/2 of spagetti sauce into a 7x11 inch baking dish
place chicken over sauce and cover with remaining sauce
sprinkle mozzarella and Parmesan cheeses on top and return to preheated oven for 20 minutes

serve:
serve over fetticini noodles with a side of green beans

I LOVE me some chicken. I also love me some red sauce and pasta. so Chicken Parmigiana has to be one of best things going, as far as I'm concerned.

I used chicken cutlets instead of whole breasts, and I didn't have any mozarella so I subbed monterey jack, and it still turned out awesome. cheerful.gif
