you will need:
1 pound chicken breast meat, cubed
2 tablespoons vegetable oil
1/2 cup sliced green bell pepper
1/2 cup slicked red bell pepper
1 cup carrot strips
1 garlic clove, minced
1 tablespoon cornstarch
1/4 cup soy sauce
1 (8oz) can pineapple chunks, juice reserved
1 tablespoon vinegar
1 tablespoon brown sugar
preparation:
combine cornstarch, soy sauce, pinapple juice, vinegar and brown sugar in a bowl
cook:
brown chicken in oil in large skillet over medium high heat
add bell peppers, carrots, and garlic and stir fry 1 to 2 minutes
pour liquid mixture into skillet along with pineapple chunks
stir together and bring to a full boil
serve:
serve over a bed of rice with eggrolls
