Safe!  Fried Chicken
The Recipe

you will need:
8 chicken thighs
3 eggs
1 cup all purpose flour
1 cup Italian bread crumbs
salt and pepper to taste
1 teaspoon paprika (or to taste)
1/2 cup vegetable oil
wax paper

preparation:
preheat oven to 350 degrees
rinse and thoroughly dry chicken
place flour, paprika, salt and pepper in shallow pan, mix
place bread crumbs in another shallow pan
place eggs in another shallow pan, beat
dredge chicken piece by piece in flour, eggs, then bread crumbs, place on wax paper
let rest for 15 minutes
pour oil in 9x13 pan
place chicken in pan*

cook:
bake in preheated oven for 30 minutes
turn over chicken
bake another 30 minutes or until meat thermometer says its done

serve:
with green beans and smashed taters and chicken gravy!

*hint: don't over crowd the pan. it will crisp more evenly if there is space between chicken pieces. if you need to use two pans or a bigger pan, then do.

this recipe is perfect for anyone who might be a little gun shy of pan frying chicken because a lady at work told them to get the oil as hot as possible. and so they thought this meant to turn the heat to high and put a lid on the pan. and when they took that lid off and placed the chicken in the SMOKING HOT OIL? the entire pan burst into 7 inch flames and they singed more than just their eyebrows. not that this happened to ME, or anything. but if you've had that experience? then this recipe is a yummy (AND SAFE) alternative to pan fried chicken.

pee. ess. sorry the chickens in this photo looks a tad burnt...it wasn't, and it was wonderful.
